The math

  • Per-pound foods: total range = weight × hours-per-pound range
  • Fixed-time foods: use the food-specific time range
  • Time is a planning range; temperature or tenderness is the finish test

Chicken thighs often take about 60 to 90 minutes, but their size and smoker performance matter. Cook until the thickest part reaches at least 165°F.

What smoker temperature is best for salmon without drying it out?

A lower smoker temperature, often around 180°F to 225°F, gives you more control. Thin fillets finish quickly, so check temperature and texture early.

Can I cold-smoke cheese in warm weather?
