The math
- Start time = serving time − longest cook estimate − rest time
- Setup time = start time − method setup allowance

A 14 lb oven-roasted turkey uses a 3–3¾ hour range plus a 30-minute rest, so a 5 p.m. dinner means starting at the conservative end of that window.
